About a year ago, the system started slowing down after a couple of days and we would reboot every days. That would take care of the problem. We could not figure out why it slowed down. About a month ago, it started hanging up every day and quite often twice a day.

We don't know what's causing the problem. You might want to try serverfault too. We have a very similar server setup and our site does exactly the same thing. It crashes even more often. I would really appreciate your answer because we have already lost many many hours trying to solve this and our client is going nuts about it.
